Cranberry-Glazed Pork Roast recipe
Ingredients:
4 lb boneless pork loin.
2 teaspoons of cornstarch.
¼ teaspoon of cinnamon.
1/8 teaspoons of salt.
½ teaspoon of grated orange peel.
2 tablespoons of orange juice.
2 tablespoons of dry sherry.
16 oz of whole berry cranberry sauce.
Directions:
In a small saucepan, stir together all of the ingredients except the pork loin.
Cook, stirring over medium heat, until thickened; set aside.
Place the pork roast in a shallow baking dish. Roast at 325°F (160°C) for 45 minutes.
Spoon ½ cup of the glaze over the roast and continue baking for another 35-45 minutes more, until its internal temperature is about 160°F (70°C).
Allow to stand for about 10 minutes before slicing and serving with the remaining sauce.
