Honey-Ginger Pork Roast recipe

Ingredients:

1 center-cut boneless pork loin, about 5 lb.
1 tablespoon of freshly-grated ginger root.
2 tablespoons of olive oil.
2 teaspoons of ground ginger.
2 teaspoons of salt.
Honey, for brushing.

Directions:

Run a knife between the fat and meat to form pockets on top of the pork roast. Using a long-bladed knife, insert the freshly-grated ginger into pockets.

In a bowl, combine the olive oil, ground ginger and salt.

Place the pork in a roasting pan and brush with the oil mixture.

Bake at 350°F (180°C) for 30 minutes per lb.

About 15 minutes before the pork roast is done, brush it completely with honey.

Let the roast stand for 15-20 minutes before slicing.
