Marinated Pork Loin Roast recipe
Ingredients:
2 cloves garlic, minced.
2 tablespoons of parsley, freshly chopped.
1 tablespoon of Dijon mustard.
1 tablespoon of water.
2 teaspoons of dried thyme.
2 teaspoons of dried basil.
2 teaspoons of sugar.
1 teaspoon of vinegar.
¼ teaspoon of salt.
1/8 teaspoon of ground red pepper.
One Boneless pork top loin roast, (about 2 lb), trimmed of all visible fat.
Directions:
In a bowl, stir together the minced garlic, parsley, mustard, water, thyme, basil, sugar, vinegar, salt and red pepper.
Place the pork in a pie plate and spread evenly with the seasonings mixture.
Cover and refrigerate for about one day.
Preheat your oven to 325°F (160°C).
Coat a roasting rack with nonstick spray and place the rack in a roasting pan.
Place the pork roast on the rack.
Roast for about 60 minutes, or until the meat thermometer inserted in the center registers 160°F (70°C).
Transfer the pork to a cutting board, cover with foil and allow to stand for about 15 minutes before slicing.
