Pork Roast with Rosemary recipe
Ingredients:
One 3 lb pork loin roast.
2 tablespoons of fresh rosemary.
4 cloves garlic.
1 teaspoon of salt.
1 teaspoon of freshly-ground black pepper.
2 tablespoons of butter.
1 small onion, chopped.
¼ cup of extra-virgin olive oil.
Directions:
Trim the fat from the pork roast.
Finely chop rosemary and garlic together.
Using a sharp knife, make about 8-10 deep cuts, about 2 inches apart, in the pork roast.
Insert small amounts of garlic mixture in the cuts.
Sprinkle with salt and freshly-ground black pepper.
Heat the butter in shallow roasting pan in oven.
Sprinkle with the chopped onion.
Place the pork in the pan; drizzle with the olive oil.
Roast, uncovered, at 350°F (180°C) for about 2 hours or until a meat thermometer registers 160°F (70°C).
Allow to stand for about 15 minutes before slicing.
